White Chocolate Mousse

I took a hiatus from this blog. A 213 day hiatus to be more precise. In the interim, I rarely looked at it and also forgot the password. That’s until a friend asked me for a recipe the other day, so I googled my own name + wordpress and there it was. All the documenting. In the last 213 days I didn’t stop baking though. I just took pictures for Instagram instead. I made some things I was pretty proud of, so here I am. Bringing you my first recipe of 2015 and hopefully I won’t get lazy this year and blog more often.

I’ve been reading up a lot of food blogs lately – Passion4baking.com and Callmecupake.se are the two bookmarked ones. I got the white chocolate mousse recipe from the former, it was super fun and easy to make. It turned out really silky smooth and rich. I decided to put it in a teacup and grate some chocolate on top. You can use anything else to serve it in [and no, you don’t need eggs or anything so don’t have to worry about any raw flavour]. Here’s the recipe, hope you enjoy making it like I did.

White chocolate mousse

Adapted by Passion 4 Baking

270 g (9½ oz) good-quality white chocolate [I used chunks instead of chips]

2 cups (500 ml) heavy cream

1 teaspoon vanilla extract

4 tablespoons powdered sugar

– Pour the cream into a saucepan and place on the heat. You’ll have to be very alert here – when the first bubble appears, take it off the heat.

– Add the white chocolate and vanilla extract to the cream.

– Stir until all the chocolate has melted into the warm cream.

– Place the bowl or saucepan in the refrigerator. Chill for at least 8 hours or overnight.

– Take the chilled cream out of the refrigerator and add the powdered sugar and using a hand held electric whisk, whisk until the mixture has a fluffy and silky texture.

– Pipe or spoon the mixture into teacup.

– You can decorate with grated chocolate or berries and serve.
